Simple recipes: our 3 favourites
Cooking should be quick and straightforward. Even when it’s our health editorial team in the kitchen, taste isn't spared. We present our favourite recipes – both healthy and delicious at the same time.
Vegetable patties
«Vegetable patties are perfect when you don’t have much at home. Depending on what’s in the fridge, I make the patties from courgettes, carrots or parsnips», says editor Florine.
Ingredients for 2 persons
Patties
- 5 potatoes
- 1 courgette
- 1 egg
- 1 tbsp. flour
- salt, pepper
Dip
- 5 tbsp. yoghurt or quark
- 1 lemon
- a little olive oil
- chives
- salt, pepper
Method
Patties
- Pre-heat the oven to 220°C
- Wash the courgettes, roughly grate, season with salt, mix and leave to stand for approx. 30 min
- Peel the potatoes and grate roughly in a bowl
- Wring out the water from the courgettes using a kitchen towel. Add the courgettes to the potatoes in the bowl
- Add the egg and flour to the mixture, season with pepper and mix well
- Line an oven tray with baking paper. Using approx. 1 tbsp of the mixture at a time, form into patties and spread on the oven tray
- Bake for 15 – 20 minutes until golden brown (turning half-way through baking)
Dip
- Mix yoghurt or quark with a little lemon juice and olive oil
- Season with salt and pepper, add chives and mix together
- Sprinkle with chives to serve
Feta and vegetables baked in the oven
«Baked feta is my favourite way of eating feta. I would be more than satisfied with that already. But to make sure it's healthy, I just add some chopped vegetables.», says editor Marlen.
Ingredients for 2 persons
- 1 pack of feta
- 1 courgette
- 2 potatoes
- 2 carrots
- 1 pepper
- olives
- olive oil
- salt
- rosemary
Method
- Chop the vegetables into small pieces and put in a bowl
- Add olive oil and seasoning and mix together
- Place the vegetables on an oven tray lined with baking paper
- Bake the vegetables in a fan oven at 220 degrees for approx. 15-20 minutes (depending on the thickness of the vegetables)
- Place the feta in a small oven dish
- Add the olive oil, olives and rosemary
- Place the feta in the oven with the vegetables and bake for approx. 10-15 minutes
Aubergine pizza
«When I come home from training, I’m starving. Before showering, I put an aubergine pizza in the oven. When I’m finished with my shower, the pizza is done», says editor Rosalie.
Ingredients for 2 persons
- 2 aubergines
- 1 tin tomato sauce
- 2 balls mozzarella
- 1 pepper
- a handful of cherry tomatoes
- olives
- olive oil
- pepper
- salt basil
- dried peperoncini
Method
- Slice the aubergines and lay on an oven tray lined with baking paper
- Drizzle with olive oil
- Spread the tomato sauce over the aubergine slices
- Add pepper, salt, pepperoncini, and onions and garlic according to taste
- Cut the mozzarella and add too
- Cut the olives, pepper and tomatoes and lay on the pizza
- Bake in the oven at 220 degrees for 15-20 minutes
- Take out of the oven and scatter with fresh basil
